An elegant drink full of berries in aroma. In flavour full of berries, meanwhile full bodied. Beginning elegantly with tea, the drink finishes off with exotic flavours of lemon grass. A drink as light as a soothing summer brise.

PREPARATION:
Muddle blackberries in shaker, then adding the other ingredients. Double strain and prepare Espuma. Spray the finished drink with essence of blackberry.
